Hey I am back with another blog of one of my most favorite an devoured dishes! i am likely to innovative when it comes to cooking with the pleasure to treat my taste buds too.. All the recipes you find on my blog are all tried and tested and would be full of flavors.

So here’s presenting to you the most delicious and quick indo-chinese recipe which is a treat for chinese lovers, Nanking Rice Recipe or as some of us call it stir fried veggies with rice and noodles.

As Indians we have a flavorful twist in most our recipes add  yes they turn out so delicious.. You can indulge yourself in the great taste n ease of cooking this recipe and enjoy the delicious dish with your family. Do let me know your reviews in the comments and also how you liked the dish.

Ingredients :

  • 2 cups boiled rice
  • 1 cup boiled noodles
  • 1 cup vegetables (cabbage, carrots, baby corn, bell peppers, mushroom’s)
  • 2 twigs of Spring Onion Greens
  • 150-200 gms of Paneer (Cottage Cheese)
  • 10 to 12 cloves of garlic
  • 4 to 5 green chilies
  • 2 tbsp of schezwan sauce
  • 5 tbsp of oil
  • 2 tsp Butter
  • Salt to taste
  • Pepper to taste
  • 1tsp soya sauce
  • 2 tsp schezwan sauce
  • 1 tsp green chilly sauce
  • 1 pack of Knor schezwan gravy. Method of preparation explained in detail in video. ( OPTIONAL)

Chinese food is a delight for everyone specially what we call it Indo-Chinese. I remember whenever I was asked about my favorites in food, Chinese would always top my list!

Because chinese and I go way back!!!! I remember when in college, if we were ever stuck at ordering something chinese would always be an option for us. We had one of the best schezwan noodles served in our canteen with spicy schezwan chutney oh what a delight that use to be! After passing out from college we still use to head back at times just to have the chinese food served there. Soon did I know I will have to get a solution for my taste buds, I tried all possible recipes that i found on the internet and landed onto a fusion that is one of my absolute favorites.

Ok, let’s get right to it.  Here are the important things I have learned over the years about how to make the best fried rice.

Some quick tips here-

-Always use cold rice for your chinese as it helps to keep the grains intact while tossing the rice with the sauces.
-Use freshly minced garlic it adds a great flavor to the dish.
-While boiling noodles add oil and salt, stir carefully so that dey don't break into bits.
- You can always stir fry veggies pre hand and keep and add in the sauces before dinner.
- Sauté your rice in butter for the perfect flavor.


There are three steps to making the process of preparing nanking rice faster and easier.

Step 1 : Keep the noodles for boiling adding a little salt and oil to it. once they are cooked well drain the excess water n keep aside. Cook the rice until they are par cooked and keep aside.

Step 2 : In a wok heat up 1tbsp of butter with 1 tsp of oil and add in freshly chopped garlic, stir fry until garlic sets in a light brown color and at this point add in 2 tbsp of schezwan sauce and saute well. Now add in our boiled rice and sprinkle it with some salt and pepper as per taste. Stir well and keep it aside for assembling.

Step 3 : Sauté all the veggies in 1 tbsp of oil until they are crisp and well cooked. Then add in your choice of sauces for the gravy, to this dish I added in 1 tsp of soya sauce, 1tsp of green chilly sauce and salt pepper as seasonings. To thicken the sauce make a slurry of corn flour and water and add in accordingly depending on how thick you want your gravy to be. Quick tip here, if you want to add that extra spice to your gravy you can go ahead and add some Thai red chilies too, gives a zest to the gravy.

Now this is my most favorite part, assembling the dish together!! In a plate go with your rice 1st, layer it with the noodles and lastly pour in your gravy on top of it all and garnish with the spring onion greens!! Cherry on cake can be added if you want to garnish it with a few French fries, trust me they taste yummy!!

There can be a few variations to this dish too. You can add in boiled chicken or scrambled egg it helps adding in a great flavor and proteins too.
